Pepsin powder is prepared from the gastric mucosa of pigs, cattle or sheep.

A white or slightly yellow, crystalline or amorphous powder, hygroscopic. The solution in water may be slightly opalescent with a weak acidic reaction.
Mandatory standard: sum of bacteria not exceeding 10000 per gram; sum of mildew and microzyme not exceeding 100 per gram; E.coil, pseudomonas aeruginosa, intestinal bacteria and gram-negative, S.aureus is absence per gram; salmonella is absence per 10 gram.
